This coffee comes from Puhuac de Méndez, a small cooperative in the Totutla area of Puebla, Mexico, founded by siblings Sharik and Hanniah Torres. Sharik’s path to coffee was anything but direct — he’d been a teacher, a veterinarian, and a zoo technician before recognizing that the small-scale producers in his region were growing exceptional coffee with almost no access to the market. The cooperative he and his sister built is lightweight but effective: they cup, classify, and market their members’ coffees, most of which come from parcels under a hectare yielding just 2–10 bags per year.

Grown at 980–1,500 masl across a diverse mix of varieties including Yellow Bourbon and Oro Azteca, this washed coffee has a warm, complex, and approachable profile. Caramel and cocoa anchor the cup, with lemon brightness and the distinctive earthy depth of tamarind and rooibos adding intrigue. Best at light to medium roast, where the sweetness and complexity shine.
